I believe their thinking was that after a couple of warlords, someone boring who would leave them alone to do whatever they wanted was a good choice. I don't think they were impressed with him particularly.

Although given the North also gets independence it does seem like a Stark coup though (albeit a short-lived one as Sansa is the only one who can or will have children).
